  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts boneless, skinless chicken breasts
  • ½ teaspoon sea salt
Sauce Ingredients
  • ¼ cup strawberry jam Use a good quality jam
  • 1 tablespoon balsamic vinegar Use good quality balsamic vinegar for best flavor
  • 1 tablespoon water Add extra if the mixture is too thick
  • ¼ cup fresh basil leaves Cut into ribbons or finely chopped
  • 2 tablespoons crumbled goat cheese Optional
  • ¼ cup fresh strawberries Sliced, optional for garnish

Method
 

Cooking Chicken
  1. Heat olive oil in a medium skillet over medium-high heat.
  2. Season chicken breasts with a sprinkle of salt on both sides and place them in the pan.
  3. Cook for about 4-5 minutes on one side or until a nice golden crust forms.
  4. Flip and cook for another 4-5 minutes or until the chicken is fully cooked through.
Making Sauce
  1. Whisk together strawberry jam, balsamic vinegar, and water in a small bowl.
  2. When the chicken is just about finished cooking, pour the sauce mixture over the top.
  3. Nestle the chicken breasts into the sauce and scrape up the brown bits at the bottom of the pan.
  4. Reduce the heat and bring the sauce to a simmer, letting it bubble for 2-3 more minutes or until it has reduced and thickened.
  5. Stir in most of the basil and simmer for 1 minute.
Serving
  1. Remove the chicken breasts from the pan and pour the sauce over each piece.
  2. Sprinkle with goat cheese if desired and garnish with the remaining basil and sliced strawberries.

Notes

Ensure chicken breasts are even in thickness for even cooking. Feel free to add other herbs, like thyme or parsley, for extra flavor. If you like a bit of heat, consider adding a pinch of red pepper flakes to the sauce.
