Dough Ingredients
  • 1 cup sourdough discard Make sure the discard is active for the best flavor.
  • 1 cup warm water
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 2 teaspoons baking powder
  • 4 cups all-purpose flour All-purpose flour is recommended.
Boiling Ingredients
  • 1/4 cup baking soda For boiling.
Topping
  • Flaky sea salt For topping the pretzel bites.

Preparation
  1. In a large mixing bowl, combine sourdough discard, warm water, sugar, and salt. Stir until dissolved.
  2. Gradually add flour and baking powder, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Divide the dough into small pieces and roll each piece into a bite-sized shape.
Cooking
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Bring a large pot of water to a boil and add the baking soda.
  3. Drop the pretzel bites into the boiling water for about 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.
  4. Sprinkle with flaky sea salt.
  5. Bake for 12-15 minutes or until golden brown.
  6. Allow to cool slightly before serving.

Notes

Serve warm with your favorite dips like mustard, cheese sauce, or chocolate. Store in an airtight container for 2-3 days or freeze for up to 3 months. Reheat in the oven before serving.
