Ingredients
  

Quesadilla Filling
  • 1 lb ground beef Can use seasoned ground beef for extra flavor.
  • 1/2 cup onion, diced
  • 1/4 cup pickles, chopped
  • 2 tbsp ketchup
  • 2 tbsp mustard
  • Salt and pepper to taste
Quesadilla Assembly
  • 4 large tortillas Store-bought tortillas are acceptable.
  • 1 cup shredded cheese (cheddar or American) Feel free to use different types of cheese.
  • Oil for frying Use enough oil to coat the skillet.

Method
 

Preparation
  1. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add diced onion, salt, and pepper to the skillet and cook until softened.
  3. Mix in ketchup and mustard, and remove from heat.
Cooking
  1. Heat another skillet over medium heat and add a bit of oil.
  2. Place a tortilla in the skillet and layer half of it with the beef mixture, shredded cheese, and pickles.
  3. Fold the tortilla in half and cook until golden brown, about 2-3 minutes per side.
  4. Repeat with remaining tortillas.
  5. Cut into wedges and serve warm.

Notes

For variations, use shredded cooked chicken instead of beef for a chicken version, or substitute with black beans or mushrooms for a vegetarian option. Serve warm with extra dipping sauces like ketchup or spicy mayo.
