Preparation
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add diced onion, salt, and pepper to the skillet and cook until softened.
- Mix in ketchup and mustard, and remove from heat.
Cooking
- Heat another skillet over medium heat and add a bit of oil.
- Place a tortilla in the skillet and layer half of it with the beef mixture, shredded cheese, and pickles.
- Fold the tortilla in half and cook until golden brown, about 2-3 minutes per side.
- Repeat with remaining tortillas.
- Cut into wedges and serve warm.
Notes
For variations, use shredded cooked chicken instead of beef for a chicken version, or substitute with black beans or mushrooms for a vegetarian option. Serve warm with extra dipping sauces like ketchup or spicy mayo.
