Preparation
  1. Boil the diced potatoes in salted water until tender, then drain and let cool.
  2. In a large bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to create the dressing.
  3. Once the potatoes have cooled, add them to the bowl with the dressing, along with the crumbled feta cheese and fresh herbs if using.
  4. Toss gently to combine, ensuring the potatoes are coated.

  1. Serve warm or chilled, and enjoy alongside grilled chicken or roasted veggies.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. To keep the potatoes fresh, add feta and herbs just before serving. Roasting the potatoes with garlic before mixing can add flavor.
