Method

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add the sliced onions and cook for 3-4 minutes, stirring occasionally.
  3. Season the chicken thighs with salt and pepper. Place them in the skillet with the onions.
  4. Cover the skillet and cook on medium-low for 2-3 minutes.
  5. Uncover and continue to cook until the chicken reaches an internal temperature of 165 degrees F, about 10 minutes.
  6. Using two forks, shred the chicken in the skillet, then stir in the BBQ sauce.
  7. Top with shredded cheese and cover for 1-2 minutes to melt the cheese.

Notes

For extra flavor, marinate the chicken thighs in the BBQ sauce for a few hours before cooking. You can serve with low-carb vegetables or on a low-carb tortilla.
