- Heat olive oil in a medium skillet over medium heat.
- Add the sliced onions and cook for 3-4 minutes, stirring occasionally.
- Season the chicken thighs with salt and pepper. Place them in the skillet with the onions.
- Cover the skillet and cook on medium-low for 2-3 minutes.
- Uncover and continue to cook until the chicken reaches an internal temperature of 165 degrees F, about 10 minutes.
- Using two forks, shred the chicken in the skillet, then stir in the BBQ sauce.
- Top with shredded cheese and cover for 1-2 minutes to melt the cheese.
Notes
For extra flavor, marinate the chicken thighs in the BBQ sauce for a few hours before cooking. You can serve with low-carb vegetables or on a low-carb tortilla.
