  • 2 medium sweet potatoes, peeled and diced
  • 1 each avocado, sliced
  • 1 each yellow onion, diced
  • 1 lb lean ground beef (93% preferred)
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tbsp olive oil Divided for roasting and cooking
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 2 tbsp hot honey Adjust for spice preference
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon

Preparation
  1. Start by preparing all the ingredients. Dice the sweet potatoes and onion, and slice the avocado.
Roasting Sweet Potatoes
  1. Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes in 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for about 25-30 minutes, or until they are tender and slightly caramelized.
Cooking Beef
  1. In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced onion and sauté for about 2-3 minutes, until translucent. Then, add the ground beef to the skillet. Cook until browned, breaking it up as you go.
  2. Once the beef is cooked, drain any excess fat. Stir in the taco seasoning, paprika, garlic powder, cinnamon, and hot honey. Mix well, allowing the spices to coat the beef evenly.
Assembly
  1. In bowls, layer the roasted sweet potatoes, the hot beef mixture, and a scoop of cottage cheese. Top with sliced avocado. Drizzle a little extra hot honey on top if you like it spicier!

Notes

For extra flavor, consider adding bell peppers or corn to the beef while cooking. If you prefer a vegetarian option, you can replace the ground beef with black beans or lentils. Adjust the amount of hot honey to control the spice level to your preference.
