  • 1 pound Gnocchi Can use fresh or frozen gnocchi.
  • 2 cups Fresh spinach Can substitute with kale or Swiss chard.
  • 1 cup Feta cheese, crumbled
  • 2 cloves Garlic, minced
  • 1 cup Heavy cream Add more for a creamier texture.
  • 2 tablespoons Olive oil
  • to taste Salt and pepper
  • Parmesan cheese (for garnish, optional)

Method
 

Preparation
  1. Cook the gnocchi according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add fresh spinach and cook until wilted, about 3-4 minutes.
  5. Pour in the heavy cream and stir until combined.
  6. Add the cooked gnocchi and crumbled feta cheese; toss gently to coat.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with Parmesan cheese if desired.

Notes

For extra flavor, you can add some red pepper flakes when cooking the garlic.
