Preparation
- Cook the gnocchi according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add fresh spinach and cook until wilted, about 3-4 minutes.
- Pour in the heavy cream and stir until combined.
- Add the cooked gnocchi and crumbled feta cheese; toss gently to coat.
- Season with salt and pepper to taste.
- Serve warm, garnished with Parmesan cheese if desired.
Notes
For extra flavor, you can add some red pepper flakes when cooking the garlic.
