  • 2 pieces boneless, skinless chicken breasts
  • 1 cup cottage cheese Use low-fat for a lighter version.
  • 1 cup marinara sauce Feel free to swap with pesto for a different flavor.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
Garnish
  • to taste Fresh basil leaves Optional, for garnish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with garlic powder, oregano, salt, and pepper.
  3. Place the chicken breasts in a baking dish.
Cooking
  1. Spread the marinara sauce over the chicken.
  2. In a bowl, mix the cottage cheese and half of the mozzarella cheese. Spoon this mixture over the chicken.
  3. Sprinkle the remaining mozzarella cheese and the grated Parmesan cheese on top.
  4. Bake in the oven for about 25-30 minutes, until the chicken is cooked through and the cheese is bubbly.
  5. Remove from the oven and let it cool for a few minutes.
  6. Garnish with fresh basil leaves, if desired.

Notes

For deeper flavor, marinate the chicken in the spices for a few hours before cooking. You may add other toppings like sliced mushrooms or spinach for added nutrition. Store leftovers in an airtight container in the refrigerator for 3-4 days.
