Preparation
- In a large bowl, combine the ground chicken, chopped onion, minced garlic, parsley, cumin, coriander, salt, and black pepper. Mix well until all ingredients are evenly blended.
- Form the mixture into small oval-shaped koftas.
Cooking
- Preheat the grill and brush it with olive oil to prevent sticking.
- Grill the koftas for about 10-12 minutes, turning occasionally until they are cooked through and have nice grill marks.
Making the Sauce
- In a separate bowl, mix the yogurt, lemon juice, and a pinch of salt to prepare the garlic yogurt sauce.
Serving
- Serve the grilled koftas with the garlic yogurt sauce on the side.
Notes
Keep the meat cold while mixing to help the koftas hold their shape. Don't overmix to avoid tough koftas. Feel free to adjust the spices to your taste, adding chili powder for extra heat.
