- In a large pitcher or punch bowl, combine the pineapple juice, coconut milk or coconut cream, and cream of coconut. Stir until smooth.
- Add the fresh lime juice and mix well. Taste and adjust sweetness or acidity if needed.
- Chill the punch mixture in the refrigerator for at least 30 minutes.
- Just before serving, gently stir in the sparkling water or lemon-lime soda.
- Serve over ice and garnish with pineapple slices, cherries, or lime wedges if desired.
Notes
Add sparkling water just before serving to keep the punch fizzy. For a lighter version, use coconut milk instead of coconut cream.
