Punch Ingredients
  • 4 cups Pineapple Juice 100% juice recommended
  • 2 cups Coconut Milk or Coconut Cream use coconut cream for a richer texture
  • 1 cup Cream of Coconut sweetened
  • 0.25 cup Fresh Lime Juice freshly squeezed
  • 2 cups Sparkling Water or Lemon-Lime Soda add just before serving
  • Ice for serving

Method
 

Instructions
  1. In a large pitcher or punch bowl, combine the pineapple juice, coconut milk or coconut cream, and cream of coconut. Stir until smooth.
  2. Add the fresh lime juice and mix well. Taste and adjust sweetness or acidity if needed.
  3. Chill the punch mixture in the refrigerator for at least 30 minutes.
  4. Just before serving, gently stir in the sparkling water or lemon-lime soda.
  5. Serve over ice and garnish with pineapple slices, cherries, or lime wedges if desired.

Notes

Add sparkling water just before serving to keep the punch fizzy. For a lighter version, use coconut milk instead of coconut cream.
