  • 1 lb Ground Beef (80/20)
  • 1 Large Egg
  • 1/3 cup Almond Flour
  • 1/4 cup Grated Parmesan Cheese
  • 3 cloves Garlic, minced
  • 1 tsp Italian Seasoning
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tbsp Fresh Parsley, chopped optional
  • 1 tbsp Olive Oil for pan-searing (optional)

Instructions
  1. Preheat oven to 400°F (200°C) if baking. Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, egg, almond flour, Parmesan cheese, garlic, Italian seasoning, salt, and black pepper. Mix gently until just combined.
  3. Form mixture into 16–20 evenly sized meatballs and place on prepared baking sheet or plate.
  4. Bake for 15–20 minutes until cooked through and internal temperature reaches 165°F (74°C).
  5. Alternatively, heat olive oil in a skillet over medium heat and cook meatballs, turning occasionally, for 12–15 minutes until browned and fully cooked.
  6. Let meatballs rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

For best results, use 80/20 ground beef for maximum juiciness. These meatballs are perfect for meal prep and can be frozen for up to 3 months.
