  • 8 slices Cooked bacon Crumbled (or smoked turkey bacon for pork-free option)
  • 4 stalks Green onions Thinly sliced
  • 1/2 cup Sour cream Or plain Greek yogurt

Method
 

Instructions
  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper. Toss thinly sliced potatoes with olive oil, salt, and pepper in a mixing bowl.
  2. Arrange potatoes in a single layer on the baking sheet. Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.
  3. Remove from oven and sprinkle evenly with shredded cheddar and crumbled bacon. Return to oven for 5 minutes until cheese is melted and bubbly.
  4. Top with sliced green onions and dollops of sour cream. Add optional toppings if desired. Serve immediately while hot and crispy.

Notes

For extra crispiness, avoid overcrowding the baking sheet. Use freshly shredded cheese for better melting. Potatoes can be pre-roasted ahead of time and reheated before adding toppings.
