Steak Marinade
  • 1.5 lb Flank steak or sirloin steak
  • 2 tbsp Olive oil
  • 2 limes Fresh lime juice juiced
  • 2 cloves Garlic minced
  • 2 tbsp Fresh cilantro chopped
  • 1 tsp Chili powder
  • 1 tsp Ground cumin
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
Cilantro Lime Rice
  • 1 cup Jasmine rice uncooked
  • 2 cups Water or low-sodium broth
  • 1 lime Fresh lime juice juiced
  • 1 tsp Lime zest
  • 2 tbsp Fresh cilantro chopped
  • 0.5 tsp Salt
Toppings
  • 1 cup Black beans drained and rinsed
  • 1 cup Corn
  • 1 cup Cherry tomatoes halved
  • 1 Avocado sliced
  • 0.25 cup Red onion finely diced

Method
 

Instructions
  1. Whisk olive oil, lime juice, garlic, cilantro, chili powder, cumin, salt, and pepper. Marinate the steak for at least 20 minutes or up to 8 hours in the refrigerator.
  2. Cook rice with water or broth according to package instructions. Stir in lime juice, lime zest, cilantro, and salt once cooked.
  3. Cook the steak in a hot skillet or grill pan for 4–6 minutes per side until desired doneness. Rest for 5–10 minutes, then slice thinly against the grain.
  4. Prepare toppings by draining beans, slicing avocado, and chopping vegetables.
  5. Assemble bowls with cilantro lime rice, sliced steak, and desired toppings. Serve immediately or store for meal prep.

Notes

For meal prep, store avocado separately to prevent browning. Steak can be substituted with grilled chicken or portobello mushrooms for variation.
