  • 2 cups Cooked chicken breast, shredded
  • 1 large Ripe avocado mashed
  • 4 slices Cheese slices (mozzarella, cheddar, or Swiss)
  • 4 slices Sandwich bread sourdough or whole grain
  • 2 tablespoons Butter or olive oil for toasting
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Black pepper or to taste
  • 1 teaspoon Lemon juice optional

Method
 

Instructions
  1. If needed, cook the chicken breast in a skillet over medium heat for 6-8 minutes per side until fully cooked. Let rest, then shred or slice.
  2. Mash the avocado in a bowl with salt, pepper, and lemon juice until slightly chunky.
  3. Spread avocado evenly over two slices of bread. Add shredded chicken on top, then place cheese slices over the chicken.
  4. Close the sandwiches with remaining bread slices. Butter the outside of each slice.
  5. Heat a skillet over medium heat. Cook sandwiches 3-4 minutes per side until golden brown and cheese is melted.
  6. Remove from heat, let rest briefly, slice, and serve warm.

Notes

For a lighter version, use whole-grain bread and part-skim cheese. Avoid overfilling to ensure even cooking and easy flipping.
