Instructions
- If needed, cook the chicken breast in a skillet over medium heat for 6-8 minutes per side until fully cooked. Let rest, then shred or slice.
- Mash the avocado in a bowl with salt, pepper, and lemon juice until slightly chunky.
- Spread avocado evenly over two slices of bread. Add shredded chicken on top, then place cheese slices over the chicken.
- Close the sandwiches with remaining bread slices. Butter the outside of each slice.
- Heat a skillet over medium heat. Cook sandwiches 3-4 minutes per side until golden brown and cheese is melted.
- Remove from heat, let rest briefly, slice, and serve warm.
Notes
For a lighter version, use whole-grain bread and part-skim cheese. Avoid overfilling to ensure even cooking and easy flipping.
