- Heat olive oil in a large skillet over medium heat.
- Add chopped onions and garlic; sauté until softened.
- Add ground turkey, cook until browned, breaking it up as it cooks.
- Stir in diced sweet potatoes and bell pepper; season with paprika, salt, and pepper.
- Cook for about 15 minutes, stirring occasionally, until sweet potatoes are tender.
- Optionally, stir in fresh spinach until wilted.
- Serve warm.
Notes
