Method
 

Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onions and garlic; sauté until softened.
  3. Add ground turkey, cook until browned, breaking it up as it cooks.
  4. Stir in diced sweet potatoes and bell pepper; season with paprika, salt, and pepper.
  5. Cook for about 15 minutes, stirring occasionally, until sweet potatoes are tender.
  6. Optionally, stir in fresh spinach until wilted.
  7. Serve warm.

Notes

Serve straight from the pan, or pair with a side salad or crusty bread. Can be stored in the refrigerator for up to 3 days or frozen for up to 2 months. Feel free to experiment with spices or add more vegetables.
