  • 1 medium green papaya, peeled and grated Choose a firm papaya for best texture
  • 1 carrot, grated
  • 1 cup cherry tomatoes, halved
  • 1/4 cup green beans, cut into 1-inch pieces
  • 2 cloves garlic, minced Crush together with chilies for extra flavor
  • 1-2 Thai bird’s eye chilies, finely chopped Adjust to taste
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce Substitute with soy sauce for vegetarian option
  • 1 tablespoon palm sugar Brown sugar can be a suitable substitute
  • Crushed peanuts (for garnish) Add as desired

Method
 

Preparation
  1. In a large mixing bowl, combine the grated papaya, carrot, cherry tomatoes, and green beans.
  2. In a separate bowl, whisk together the garlic, chilies, lime juice, fish sauce, and palm sugar until well combined.
  3. Pour the dressing over the salad and toss until all the ingredients are evenly coated.
  4. Garnish with crushed peanuts before serving.
