Method
 

Preparation
  1. Wash the cucumbers, carrots, and red bell pepper. Peel the cucumbers if preferred.
  2. Cut the cucumbers in half lengthwise and slice them into thin half-moons.
  3. Julien the carrots and chop the red bell pepper into bite-sized pieces.
  4. Thinly slice the red onion and chop the cilantro.
Making the Dressing
  1. In a small bowl, combine rice vinegar, soy sauce, sugar, sesame oil, and chili flakes (if using).
  2. Mix the dressing until the sugar dissolves.
Combining and Serving
  1. In a large bowl, combine the cucumbers, carrots, red bell pepper, red onion, and cilantro.
  2. Pour the dressing over the salad and toss everything together until well mixed.
  3. Add salt to taste.

Notes

Serve chilled or at room temperature. Great as a side dish or a snack. For extra flavor, garnish with additional cilantro or sesame seeds.
