  • 1 pound ground beef or turkey Use your preferred meat option.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa Choose your preferred spice level.
  • 2 cups shredded cheese Use cheddar or a blend for best flavor.
Toppings
  • Sour cream, for topping
  • Guacamole, for topping
  • Chopped cilantro, for garnish

Method
 

Preparation
  1. In a large skillet, brown the ground beef or turkey with diced onion and garlic over medium heat.
  2. Drain any excess fat.
  3. Stir in the black beans, corn, taco seasoning, and salsa.
  4. Cook until heated through, about 5-7 minutes.
  5. Sprinkle shredded cheese on top and cover until melted.
Serving
  1. Serve hot, topped with sour cream, guacamole, and chopped cilantro.

Notes

To store, let it cool, then transfer to an airtight container. Lasts 3-4 days in the fridge or up to 3 months in the freezer. Reheat in the microwave or on the stove.
