  • 1 cup sweet corn, grilled or canned

  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped Alternative herbs like dill or parsley can be used.
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Preparation
  1. In a large bowl, combine the diced chicken, sweet corn, diced cucumber, and chopped red onion.
  2. In a separate bowl, mix the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper until smooth.
  3. Pour the dressing over the chicken and vegetable mixture. Stir well to combine all ingredients.
  4. If using, sprinkle crumbled feta cheese on top for added flavor.
  5. Chill the salad in the refrigerator for about 30 minutes before serving to let the flavors meld.

Notes
