Ingredients
  

Fresh Ingredients
  • 2 cups Fresh strawberries, sliced Choose ripe strawberries for the best flavor.
  • 1 medium Avocado, diced
  • 4 oz Goat cheese, crumbled Can be substituted with feta cheese.
  • 5 cups Mixed greens (such as spinach or arugula) Kale or romaine can also be used.
  • 1/4 medium Red onion, thinly sliced
  • 1/2 cup Walnuts or pecans, optional Lightly toast for added flavor.
Dressing
  • 1/4 cup Olive oil
  • 2 tbsp Balsamic vinegar Experiment with other dressings if desired.
  • 1 tsp Salt
  • 1/2 tsp Pepper

Method
 

Preparation
  1. In a large bowl, combine mixed greens, sliced strawberries, diced avocado, and thinly sliced red onion.
  2. Crumble goat cheese on top of the salad.
  3. If using, add walnuts or pecans for extra crunch.
Dressing
  1. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to create the dressing.
  2. Drizzle the dressing over the salad and toss gently to coat.
Serving
  1. Serve immediately and enjoy your refreshing spring or summer meal!

Notes

Best enjoyed fresh. If you have leftovers, store them in an airtight container in the fridge for up to one day. Keep the dressing separate until you are ready to eat to prevent the greens from getting soggy.
