- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract and mix until fully combined.
- In a separate bowl, whisk together flour, strawberry gelatin, baking powder, and salt. Gradually add to the wet ingredients.
- Cover the dough and refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C). Roll dough into 1-inch balls and place on a lined baking sheet.
- Bake for 10–12 minutes until edges are set. Remove from oven and immediately press a chocolate kiss into each cookie.
- Allow cookies to cool completely, then dust lightly with powdered sugar before serving.
Notes
Chilling the dough is essential to prevent spreading. Do not overbake—cookies should remain soft in the center.
