Preparation
- Preheat your oven to 325°F (165°C).
- In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9x13 inch pan to form the crust.
- In another bowl, beat the cream cheese until smooth. Add in 1 cup sugar and vanilla extract, mixing well.
- Add eggs one at a time, mixing on low speed until just combined.
- Pour the cream cheese mixture over the crust and smooth it out.
- Top with sliced strawberries and sprinkle cornstarch over them.
Baking
- Bake for 25-30 minutes until the center is set.
- Let it cool, then refrigerate for at least 2 hours before cutting into bars.
Notes
For extra flavor, consider adding a bit of lemon zest to the cream cheese mixture. Store in an airtight container in the refrigerator for 4-5 days or freeze for up to 3 months.
