Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
Filling
  • 2 packages cream cheese, softened 8-ounce packages
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 tablespoon cornstarch
  • 1 cup fresh strawberries, sliced Ensure they are fresh and ripe for best taste

Method
 

Preparation
  1. Preheat your oven to 325°F (165°C).
  2. In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9x13 inch pan to form the crust.
  3. In another bowl, beat the cream cheese until smooth. Add in 1 cup sugar and vanilla extract, mixing well.
  4. Add eggs one at a time, mixing on low speed until just combined.
  5. Pour the cream cheese mixture over the crust and smooth it out.
  6. Top with sliced strawberries and sprinkle cornstarch over them.
Baking
  1. Bake for 25-30 minutes until the center is set.
  2. Let it cool, then refrigerate for at least 2 hours before cutting into bars.

Notes

For extra flavor, consider adding a bit of lemon zest to the cream cheese mixture. Store in an airtight container in the refrigerator for 4-5 days or freeze for up to 3 months.
