  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened Use room temperature for better mixing.
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup milk Use room temperature.
  • Food coloring (various colors) Gel food coloring gives the most vibrant colors.
Toppings
  • Fresh fruits (strawberries, blueberries, etc.) Use any fruits you like for topping.
  • Whipped cream For frosting and decorating.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk.
  6. Divide the batter into bowls and add food coloring to create different colors.
Baking
  1. Pour each colored batter into the prepared cake pans.
  2. Bake for 25-30 minutes or until a toothpick comes out clean.
  3. Let the cakes cool completely before removing from pans.
Assembly
  1. Stack layers with whipped cream in between, and top with fresh fruits.

Notes

You can make a gluten-free version by replacing all-purpose flour with a gluten-free flour blend. Experiment with different fruits or use cream cheese frosting instead of whipped cream.
