Ingredients
  

For the rice
  • 2 cups 2 cups sushi rice Rinsed well to remove excess starch.
  • 2.5 cups 2 1/2 cups water
  • 1/4 cup 1/4 cup rice vinegar
  • 2 tablespoons 2 tablespoons sugar Adjust to taste for sweetness.
  • 1 teaspoon 1 teaspoon salt
For the filling
  • 8 ounces 8 ounces Spam, sliced into 1/4-inch pieces Cook until crispy.
  • 1 tablespoon 1 tablespoon soy sauce
  • 1 tablespoon 1 tablespoon mirin (optional) Use for added flavor.
  • 1 tablespoon 1 tablespoon vegetable oil For cooking the Spam.
For assembly
  • 4 sheets 4 sheets nori, cut into strips
  • 1/4 cup 1/4 cup green onions, chopped For garnishing.
  • to taste Sesame seeds for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until the water runs clear.
  3. Combine the rinsed rice and water in a medium saucepan. Bring to a boil.
  4. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed.
  5. Remove from heat and let it sit, covered, for 10 minutes.
Mixing the rice
  1. In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved.
  2. Gently fold this mixture into the cooked rice, ensuring it’s evenly coated. Allow the rice to cool slightly.
Cooking the Spam
  1. While the rice cools, heat the vegetable oil in a skillet over medium heat.
  2. Add the sliced Spam and cook until browned and crispy on both sides, about 3-4 minutes per side.
  3. Drizzle the soy sauce and mirin over the Spam during the last minute of cooking, letting it caramelize slightly.
Assembly and Baking
  1. In a greased 9×13-inch baking dish, spread half of the sushi rice evenly across the bottom.
  2. Layer the cooked Spam on top, followed by the remaining sushi rice, pressing down gently to pack it.
  3. Bake in the preheated oven for 20-25 minutes until heated through.
  4. Remove from the oven and let it cool for about 5 minutes.
  5. Cut into squares or rectangles and serve warm, garnished with chopped green onions and sesame seeds if desired.

Notes

Spam Musubi Bake is best served warm. Pair it with a side salad or some vegetables for a complete dish. Consider adding furikake seasoning for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
