  • 2 cups cold cooked rice Use day-old rice for best results.
  • 1 can Spam (12 oz), diced Provides unique flavor and texture.
  • 2 large eggs, beaten Scramble in the pan.
  • 1 cup mixed vegetables Customize as desired.
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil For frying.
  • 1 clove garlic, minced Adds flavor.
  • to taste Salt and pepper Season to preference.

Method
 

Cooking
  1. Heat the vegetable oil in a large pan over medium-high heat. Add the diced Spam and fry until it’s crispy.
  2. Add the minced garlic and mixed vegetables to the pan. Stir-fry until the veggies are fragrant and tender.
  3. Next, add the cold cooked rice to the pan. Stir everything together until the rice is heated through and mixed well with the other ingredients.
  4. Push the rice mixture to one side of the pan and pour the beaten eggs onto the other side. Scramble the eggs until they’re fully cooked, and then mix them into the rice.
  5. Pour the soy sauce, oyster sauce, and sesame oil over the rice. Toss everything together so that the sauces coat the rice evenly. Season with salt and pepper to taste.
  6. Stir in the sliced green onions, then remove the pan from heat. Serve the Spam Fried Rice hot.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days or freeze for 1-2 months. Reheat before serving.
