  • 2 cups all-purpose flour
  • 1/2 cup sourdough discard
  • 1/2 cup unsalted butter, cold and cubed Ensure butter is cold for flaky texture.
  • 1/4 cup ice water
  • 1/2 teaspoon salt
Filling Ingredients
  • Filling of your choice (e.g., seasoned ground meat, cheese, veggies) Experiment with different fillings for variety.

Method
 

Preparation
  1. In a large bowl, combine flour and salt.
  2. Add cold cubed butter and mix until crumbly.
  3. Stir in sourdough discard.
  4. Gradually add ice water until the dough comes together.
  5. Divide the dough into small balls and refrigerate for 30 minutes.
Baking
  1. Preheat the oven to 375°F (190°C).
  2. Roll out each ball into a circle, fill with your choice of filling, fold over, and seal.
  3. Place empanadas on a baking sheet and bake for 25-30 minutes or until golden brown.

Notes

Serve warm or at room temperature. These empanadas can be paired with salsa, guacamole, or a fresh salad for a complete meal.
