- Heat olive oil in a large skillet over medium heat. Add the cooked chicken, garlic powder, salt, and black pepper, and cook for 2–3 minutes until warmed through.
- Pour in the chicken broth and heavy cream. Stir well and bring to a gentle simmer.
- Add the cheese tortellini and cook according to package instructions, stirring occasionally until tender.
- Stir in the roasted red peppers, smoked pepper jack cheese, and Parmesan cheese. Mix until the cheese is fully melted and the sauce is creamy.
- Taste and adjust seasoning if needed. Remove from heat and serve immediately.
Notes
For a lighter version, replace heavy cream with half-and-half or unsweetened oat milk mixed with extra broth. Use mild pepper jack for less heat.
