  • 1 lb Cooked chicken breast shredded or diced
  • 2 tbsp Olive oil
  • 1 cup Chicken broth low sodium
  • 1 cup Heavy cream
  • 1 cup Smoked pepper jack cheese shredded
  • 0.25 cup Parmesan cheese grated
  • 0.5 cup Roasted red peppers diced
  • 1 tsp Garlic powder
  • 0.5 tsp Salt or to taste
  • 0.25 tsp Black pepper or to taste

Method
 

Instructions
  1. Heat olive oil in a large skillet over medium heat. Add the cooked chicken, garlic powder, salt, and black pepper, and cook for 2–3 minutes until warmed through.
  2. Pour in the chicken broth and heavy cream. Stir well and bring to a gentle simmer.
  3. Add the cheese tortellini and cook according to package instructions, stirring occasionally until tender.
  4. Stir in the roasted red peppers, smoked pepper jack cheese, and Parmesan cheese. Mix until the cheese is fully melted and the sauce is creamy.
  5. Taste and adjust seasoning if needed. Remove from heat and serve immediately.

Notes

For a lighter version, replace heavy cream with half-and-half or unsweetened oat milk mixed with extra broth. Use mild pepper jack for less heat.
