  • 1 lb Turkey or Chicken Sausage sliced or crumbled
  • 1 small Onion diced
  • 2 Carrots peeled and sliced
  • 2 Celery Stalks sliced
  • 3 Garlic Cloves minced
  • 5 cups Chicken Broth low sodium
  • 1 tsp Italian Seasoning
Creamy Finish
  • 20 oz Cheese Tortellini fresh or frozen
  • 4 oz Cream Cheese softened
  • 1 cup Milk or Light Cream
  • 2 cups Fresh Spinach optional

Method
 

Instructions
  1. If desired, lightly brown the sausage in a skillet for extra flavor. Transfer to the slow cooker.
  2. Add onion, carrots, celery, garlic, broth, and Italian seasoning to the slow cooker. Stir to combine.
  3. Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours, until vegetables are tender.
  4. About 30 minutes before serving, stir in the tortellini. Whisk cream cheese with milk until smooth and add to the soup.
  5. Add spinach during the last 5 minutes of cooking. Taste and adjust seasoning, then serve hot.

Notes

For best texture, avoid overcooking the tortellini. Leftovers can be stored in the refrigerator for up to 3 days. Add extra broth when reheating if needed.
