- If desired, lightly brown the sausage in a skillet for extra flavor. Transfer to the slow cooker.
- Add onion, carrots, celery, garlic, broth, and Italian seasoning to the slow cooker. Stir to combine.
- Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours, until vegetables are tender.
- About 30 minutes before serving, stir in the tortellini. Whisk cream cheese with milk until smooth and add to the soup.
- Add spinach during the last 5 minutes of cooking. Taste and adjust seasoning, then serve hot.
Notes
For best texture, avoid overcooking the tortellini. Leftovers can be stored in the refrigerator for up to 3 days. Add extra broth when reheating if needed.
