- Season the chicken breasts on both sides with salt and black pepper.
- Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook for 5–7 minutes per side until golden and fully cooked. Remove and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth and scrape the bottom of the pan to deglaze and release the browned bits.
- Add the Boursin cheese and heavy cream. Stir until the cheese melts and the sauce becomes smooth and creamy.
- Return the chicken to the skillet and simmer for 2–3 minutes, spooning the sauce over the chicken.
- Garnish with fresh parsley and serve warm with your favorite side dishes.
Notes
For a lighter version, substitute half-and-half for heavy cream. Serve with pasta, rice, or roasted vegetables for a complete meal.
