Preparation
- Preheat the grill to medium-high heat or prepare a skillet over medium heat.
- In a bowl, combine diced mango, jalapeño, red onion, lime juice, salt, and pepper. Mix well to make the mango salsa.
- Brush the salmon fillets with olive oil and season with salt and pepper.
Cooking
- Grill or pan-sear the salmon for about 4-5 minutes per side, or until the salmon is cooked through.
- Top the cooked salmon with mango salsa and serve immediately. Optionally, garnish with fresh cilantro.
Notes
If you have leftovers, store the salmon and mango salsa separately in airtight containers in the refrigerator. Consume the salmon within 2 days, and the salsa should be eaten within 1-2 days for the best taste and freshness.
