Method
 

Preparing the Carrots
  1. Preheat your oven to 425°F (220°C).
  2. Wash and trim the carrots, leaving the skins on for extra flavor.
  3. In a bowl, toss the carrots with olive oil, maple syrup, cumin, smoked paprika, salt, and pepper.
  4. Spread the carrots evenly on a baking sheet.
  5. Roast in the oven for about 25-30 minutes until they are tender and caramelized, stirring halfway through.
Making the Whipped Ricotta
  1. In a mixing bowl, combine the ricotta, heavy cream, lemon zest, and a pinch of salt.
  2. Using a hand mixer or a whisk, whip the mixture until it is smooth and creamy.
Assembling the Dish
  1. Once the carrots are done, remove them from the oven and let them cool slightly.
