Ingredients
  

Red Velvet Dough
  • 240 ml Whole milk, warm
  • 7 g Active dry yeast
  • 75 g Granulated sugar
  • 85 g Unsalted butter, melted
  • 2 large Eggs room temperature
  • 500 g All-purpose flour
  • 15 g Unsweetened cocoa powder
  • 1 tsp Salt
  • 1 tsp Red gel food coloring or as needed
Cinnamon Filling
  • 150 g Brown sugar packed
  • 2 tbsp Ground cinnamon
  • 85 g Unsalted butter, softened
Cream Cheese Frosting
  • 225 g Cream cheese, softened
  • 60 g Unsalted butter, softened
  • 180 g Powdered sugar
  • 1 tsp Vanilla extract
  • 2 tbsp Milk as needed for consistency

Method
 

Instructions
  1. Activate the yeast by mixing warm milk, a little sugar, and yeast. Let sit until foamy, about 10 minutes.
  2. Mix in butter, eggs, sugar, cocoa powder, salt, food coloring, and flour. Knead until smooth and elastic.
  3. Cover the dough and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  4. Roll out the dough, spread butter, and sprinkle with brown sugar and cinnamon.
  5. Roll tightly, slice into rolls, and place in a greased baking dish. Let rise again for 30–45 minutes.
  6. Bake at 175°C (350°F) for 25–30 minutes until cooked through.
  7. Beat frosting ingredients until smooth and spread over warm rolls before serving.

Notes

For best results, use gel food coloring and frost the rolls while warm so the frosting melts into the swirls.
