- Heat the oil in a large skillet over medium heat. Add the chopped onion and cook until soft and translucent.
- Add the garlic and ginger and cook for about 30 seconds until fragrant.
- Add the ground chicken and cook, breaking it apart, until fully cooked and lightly browned.
- Stir in the hoisin sauce, soy sauce, rice vinegar, and sesame oil until well combined.
- Add the chopped water chestnuts and green onions. Simmer for 2–3 minutes, then remove from heat.
- Spoon the chicken mixture into lettuce leaves and serve immediately.
Notes
Serve warm with crisp lettuce cups. For a gluten-free option, use tamari instead of soy sauce and gluten-free hoisin.
