  • 2 cups pesto sauce Use fresh basil pesto for best flavor.
  • 2 pieces chicken breasts Make sure to season adequately.
  • 1 cup grated Parmesan cheese Ensure chicken is evenly coated for a crispy crust.
  • 2 tablespoons olive oil For cooking the chicken.
  • Salt and pepper to taste Adjust seasoning as desired.

Cooking the Pasta and Chicken
  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Season the chicken breasts with salt and pepper. Coat them in grated Parmesan cheese.
  3. Heat olive oil in a large pan over medium heat. Add the chicken and cook for 5-7 minutes on each side until golden and cooked through.
  4. In the same pot, add the cooked pasta and pesto sauce. Stir until well combined.
  5. Serve the pesto pasta topped with crispy Parmesan chicken.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. When reheating, add a splash of olive oil or more pesto if needed.
