Ingredients
  

Pasta and Vegetables
  • 2 cups elbow macaroni Cooked according to package instructions.
  • 2 cups fresh vegetables (bell peppers, cucumber, tomatoes) Chopped.
  • 1 cup baby peas
  • 1 cup Spam Diced.
Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons dill pickle juice
  • 1/4 teaspoon black pepper Adjust to taste.

Method
 

Preparation
  1. Cook the elbow macaroni according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked macaroni, chopped fresh vegetables, baby peas, and diced Spam.
  3. In a separate bowl, mix mayonnaise, dill pickle juice, and black pepper to create the dressing.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Pasta salad can be served as a side dish or main course. Customize with additional vegetables or proteins. Store in an airtight container in the fridge for 3 to 5 days. To keep it fresh longer, add dressing just before serving.
