Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the grated zucchini, oil, eggs, orange zest, and vanilla extract.
  3. In another bowl, combine the flour, sugars, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Cooking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve with butter or cream cheese. Drizzle with honey or dust with powdered sugar for added flavor.
