  • 12 pieces lasagna noodles Break the noodles into pieces
  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 piece onion, chopped Add chopped onion for flavor
  • 2 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 3 cups chicken or vegetable broth
  • 2 cups spinach, chopped
  • 1 tsp Italian seasoning Use fresh herbs for more flavor
  • to taste Salt and pepper
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese For topping
  • as needed Parmesan cheese for serving Optional garnish

Method
 

Preparation
  1. In a large skillet, brown the ground meat with chopped onion and garlic over medium heat until cooked through.
  2. Add the crushed tomatoes, broth, Italian seasoning, salt, and pepper to the skillet. Stir to combine.
  3. Break the lasagna noodles into pieces and add to the skillet. Cover and cook for about 15-20 minutes until noodles are tender, stirring occasionally.
  4. Stir in the chopped spinach and ricotta cheese until well combined.
  5. Sprinkle mozzarella cheese on top and cover until the cheese is melted.
  6. Serve hot, topped with Parmesan cheese if desired.

Notes

For added flavor, consider using fresh herbs like basil or oregano along with the Italian seasoning. If you like a little spice, add some red pepper flakes to the skillet while cooking. Feel free to mix in other veggies like bell peppers or mushrooms for extra nutrition.
