Preparation
- Bring the whole milk and water or broth to a boil in a large pot.
- Add your pasta to the boiling mixture. Reduce the heat and let it simmer for 10 minutes.
- Stir in the finely chopped broccoli and continue cooking for 2-3 more minutes, until the pasta and broccoli are cooked to your liking.
- Remove the pot from heat. Stir in the cheddar cheese, Greek yogurt, and optional butter or ghee until the cheese is melted.
- Serve and enjoy your One Pot Healthy Broccoli Mac and Cheese!
Notes
Serve warm with a side salad or crusty bread. Sprinkle extra cheese or freshly cracked black pepper on top for added flavor. Leftovers can be stored in an airtight container in the fridge for 3-4 days. Reheat with a splash of milk if needed.
