  • 1.5 to 2 pounds chicken thighs or breasts Use thighs for juiciness.
  • 2 cups broccoli florets or green beans Any quick cooking vegetable can be used.
  • 1 pint cherry tomatoes Adds sweetness and color.
  • 1 small red onion, sliced For added flavor and texture.
  • 3 tablespoons olive oil
  • 2 to 3 cloves garlic, chopped Fresh garlic adds depth.
  • 1 each lemon, zest and juice Brightens the dish.
  • to taste Salt and pepper Essential for flavor.
  • to taste Italian seasoning Or your preferred herbs.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Toss the veggies (broccoli or green beans, cherry tomatoes, and red onion) with olive oil, salt, and pepper directly on the sheet pan.
  3. Push the veggies to the sides of the pan and place the chicken in the middle.
  4. In a small bowl, mix together garlic, lemon zest, lemon juice, and a pinch of Italian seasoning. Drizzle this mixture over the chicken and veggies.
Cooking
  1. Bake in the preheated oven for 22 to 30 minutes, or until the chicken is cooked through and the veggies are roasted and slightly browned.
  2. If desired, spoon the pan juices over the chicken before serving for added flavor.

Notes

Season chicken early if possible for better flavor. This meal is flexible; substitute vegetables based on what you have on hand.
