Preparation
- Preheat your oven to 425°F (220°C).
- Toss the veggies (broccoli or green beans, cherry tomatoes, and red onion) with olive oil, salt, and pepper directly on the sheet pan.
- Push the veggies to the sides of the pan and place the chicken in the middle.
- In a small bowl, mix together garlic, lemon zest, lemon juice, and a pinch of Italian seasoning. Drizzle this mixture over the chicken and veggies.
Cooking
- Bake in the preheated oven for 22 to 30 minutes, or until the chicken is cooked through and the veggies are roasted and slightly browned.
- If desired, spoon the pan juices over the chicken before serving for added flavor.
