- In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and pepper.
- Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through.
- In a small bowl, mix together the balsamic vinegar and any remaining olive oil. Pour the mixture over the chicken in the skillet.
- Add the cherry tomatoes on top of the chicken and reduce the heat to low. Cover the skillet and let simmer for 5 minutes.
- Sprinkle the mozzarella cheese on top of the chicken and tomatoes, cover again, and let it melt for about 3-4 minutes.
- Garnish with fresh basil before serving.
Notes
Make sure not to overcrowd the skillet. For enhanced flavor, marinate the chicken in balsamic vinegar and olive oil for a few hours before cooking. Add chopped vegetables for added texture.
