  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 cups cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • to taste Fresh basil leaves, for garnish
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and pepper.
  2. Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through.
  3. In a small bowl, mix together the balsamic vinegar and any remaining olive oil. Pour the mixture over the chicken in the skillet.
  4. Add the cherry tomatoes on top of the chicken and reduce the heat to low. Cover the skillet and let simmer for 5 minutes.
  5. Sprinkle the mozzarella cheese on top of the chicken and tomatoes, cover again, and let it melt for about 3-4 minutes.
  6. Garnish with fresh basil before serving.

Notes

Make sure not to overcrowd the skillet. For enhanced flavor, marinate the chicken in balsamic vinegar and olive oil for a few hours before cooking. Add chopped vegetables for added texture.
