Ingredients
  

For the cake
  • 2 cups heavy whipping cream
  • 1 cup vanilla pudding mix
  • 2 cups cold milk
  • 1 package graham crackers
For the ganache
  • 1 cup chocolate chips
  • 1/2 cup heavy cream for ganache
  • 1 teaspoon vanilla extract
  • Powdered sugar for serving, optional

Method
 

Preparation
  1. In a large bowl, whip the heavy cream until stiff peaks form.
  2. In another bowl, whisk together the vanilla pudding mix and cold milk until smooth.
  3. Gently fold the whipped cream into the pudding mixture.
  4. In a separate saucepan, heat 1/2 cup of heavy cream until simmering. Pour it over the chocolate chips in a bowl, let it sit for a minute, then stir until smooth and combined.
Assembly
  1. Layer graham crackers at the bottom of a dish.
  2. Spread half of the pudding mixture over the crackers, then drizzle with half of the chocolate ganache.
  3. Repeat the layers with the remaining graham crackers, pudding mixture, and ganache.
Cooling
  1. Refrigerate for at least 4 hours or overnight before serving.

Notes

Serve chilled and dusted with powdered sugar for a fancy touch. Leftovers should be stored in the refrigerator and consumed within 3-4 days.
