Ingredients
  

For the Chicken
  • 2 pounds Boneless chicken thighs or breasts Thighs are juicier, but breasts can also be used.
  • 2 cups Buttermilk Can substitute with homemade buttermilk if needed.
  • 1/4 cup Hot sauce Adjust according to spice preference.
  • 1.5 cups Flour For the dredging mixture.
  • 1 tablespoon Cayenne pepper For spiciness; can adjust to taste.
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 4 Sandwich buns Toast if desired.
For Assembly
  • 1 cup Pickles For topping the sandwich.
  • 1 cup Lettuce Fresh, for crunch.
  • 1/2 cup Mayo To spread on the buns.

Method
 

Marinating the Chicken
  1. In a bowl, mix buttermilk and hot sauce. Coat the chicken in this mixture and let it marinate for at least an hour.
Preparing the Dredging Mixture
  1. In another bowl, combine flour, cayenne pepper, garlic powder, onion powder, salt, and pepper.
Frying the Chicken
  1. Remove chicken from the buttermilk mixture, letting excess drip off, then dredge in the flour mixture.
  2. Heat oil in a frying pan over medium heat and fry the chicken until golden brown and cooked through, about 6-8 minutes per side.
Assembling the Sandwich
  1. Toast the sandwich buns if desired.
  2. Spread mayo on the buns, add fried chicken, lettuce, and pickles. Serve hot.

Notes

If you have leftovers, store the fried chicken separately from the buns and toppings. Place the chicken in an airtight container in the fridge for up to 3 days.
