Preparation
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, beat the peanut butter, softened butter, brown sugar, and granulated sugar until light and creamy.
- Mix in the egg and vanilla extract until smooth.
- Add the flour, baking soda, and salt, then stir just until a soft dough forms.
- Scoop the dough into 24 even portions, roll gently, and place them on the prepared baking sheet with space between each one.
Baking
- Bake for 9 to 11 minutes, until the edges are lightly golden and the centers are still soft.
- Let the cookies cool on the pan for 2 minutes, then gently press one marshmallow half onto each cookie.
- Allow the cookies to cool completely so the topping stays in place.
- Spoon or pipe white icing around each marshmallow to create the melted snow look.
- Add mini chocolate chips for the eyes and mouth, then finish with an orange sprinkle piece or a small dot of orange gel for the nose.
- Let the decorations set before serving or storing.
Notes
Store cookies in an airtight container at room temperature for up to a week, or freeze separated with parchment paper for longer storage. Get creative with different candies for decoration!
