Main Ingredients
  • 2 pieces skinless chicken breasts, butterflied and pounded to ½-inch thickness Tender and juicy, perfect for soaking up flavors.
  • ½ cup all-purpose flour (or almond flour for gluten-free) Provides the perfect coating.
  • 6 tablespoons butter (or substitute with olive oil) Essential for creating a luxurious sauce.
  • 2 tablespoons extra virgin olive oil Adds robust Mediterranean flavor.
  • ¼ cup fresh lemon juice Enhances the dish with refreshing tang.
  • ½ cup chicken stock Adds richness to the sauce.
  • tablespoons capers, rinsed and chopped Gives delightful crunch and flavor.
  • 2 cloves garlic, minced Adds aromatic depth to the sauce.
  • to taste none salt and pepper Essential for elevating flavors.
  • for garnish none fresh parsley and lemon slices Add elegance to presentation.

Method

Preparation
  1. Start by flattening the chicken breasts to an even thickness. This helps them cook evenly and makes them tender.
  2. Season the flour with salt and pepper, and then coat each piece of chicken in the flour, shaking off any excess.
Cooking
  1. In a large skillet, melt 4 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
  2. Add the chicken pieces and cook until golden brown, about 3-4 minutes on each side.
  3. Once cooked, remove the chicken from the pan and set aside.
  4. In the same skillet, add minced garlic and capers, cooking for about 1 minute until fragrant.
  5. Stir in the chicken stock and lemon juice, scraping up any brown bits from the pan.
  6. Return the chicken to the skillet and simmer for another 2-3 minutes.
  7. Finish by whisking in the remaining butter until melted and smooth.
Serving
  1. Serve the Mediterranean Style Chicken Piccata hot, garnished with fresh parsley and lemon slices.
  2. This dish pairs well with a side of pasta, rice, or a fresh garden salad.

Notes

Use fresh lemon juice for the best flavor. Don’t skip the capers; they add a unique zing that enhances the dish. You can easily adjust the garlic to your taste. Adding more herbs like oregano or thyme can boost the Mediterranean flavor profile.
