  • 1 pound ground chicken Main protein
  • 1 small onion, finely chopped For flavor

  • 1 medium bell pepper, chopped Red or green
  • 1 teaspoon dried oregano For flavor
  • 1 teaspoon smoked paprika For flavor
  • 1/2 teaspoon ground cumin For flavor
  • Salt and pepper to taste For seasoning
  • 1 cup cherry tomatoes, halved For flavor
  • 1/3 cup pitted Kalamata olives, sliced For flavor
  • 1/4 cup crumbled feta cheese For garnish
  • 2 tablespoons fresh parsley, chopped For garnish
  • 1/2 none Juice of half a lemon For freshness

Method
 

Cooking Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground chicken and cook until browned, breaking it apart with a spoon, about 6-8 minutes.
  3. Add the chopped onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 2-3 minutes.
  4. Stir in the bell pepper, oregano, smoked paprika, cumin, salt, and pepper. Cook for another 3-4 minutes until the bell pepper softens slightly.
  5. Add the cherry tomatoes and olives to the skillet. Mix well and allow the tomatoes to cook down for about 5 minutes.
  6. Sprinkle the crumbled feta cheese over the mixture and let it melt slightly into the skillet.
  7. Remove from heat and stir in the fresh parsley and lemon juice.
  8. Taste and adjust seasoning if necessary. Serve warm.

Notes

For best flavor, ensure to brown the chicken well. Feel free to add more vegetables like zucchini or spinach for added nutrition. For a spicy kick, add some red pepper flakes while cooking. This dish is perfect for meal prep and can easily be made in advance.
