  • 1 can chickpeas, drained and rinsed Make sure to rinse the chickpeas well to remove excess sodium.
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 red onion, finely chopped
Dressing
  • 3 tablespoons olive oil Adjust the amount of olive oil according to taste preference.

Method
 

Preparation
  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
Serving
  1. Serve immediately or chill in the fridge for 30 minutes before serving.

Notes

You can serve this salad on its own or pair it with pita bread, grilled meats, or alongside other salads. For added flavor, sprinkle feta cheese on top before serving. Store in an airtight container in the refrigerator for up to three days.
