Preparation
  1. Begin by slicing the chicken breast into bite-sized pieces. Season with salt, black pepper, and dried oregano.
  2. Heat the olive oil in a large pan over medium-high heat.
  3. Add the chicken pieces and cook until browned and fully cooked, about 5-7 minutes.
  4. Once the chicken is cooked, add the minced garlic and stir for about 30 seconds until fragrant.
  5. Add the red bell pepper, yellow squash, and cherry tomatoes to the pan. Cook for another 4-5 minutes until the vegetables are tender.
  6. Finally, add the fresh spinach and red pepper flakes. Cook for an additional 2-3 minutes until the spinach has wilted.
  7. Remove the pan from heat and stir in the lemon zest for a burst of flavor.

Notes

Serve warm, garnished with fresh herbs if desired. Pairs perfectly with whole grains or enjoyed on its own for a low-carb option. To store leftovers, refrigerate in an airtight container for 3-4 days.
