- In a large skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt and pepper and add them to the skillet. Cook until browned on both sides.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Add heavy cream, sun-dried tomatoes, oregano, and basil to the skillet, stirring to combine.
- Return the chicken to the skillet and let it simmer in the sauce for 15-20 minutes, or until cooked through.
Serving
- Garnish with fresh parsley and serve with pasta, rice, or a fresh garden salad.
Notes
Brown the chicken well for extra flavor. Don't skip the fresh parsley as it adds a lovely pop of color and freshness. You can adjust the seasoning based on your taste. Feel free to add more herbs if you like a stronger flavor.
