Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together Dijon mustard and maple syrup.
  3. Season the chicken breasts with salt and pepper, then coat them with the maple Dijon mixture.
  4. Toss the diced sweet potatoes in olive oil, salt, and pepper, and spread them on a baking sheet.
