  • 0.25 cup ice water
For the mango curd filling
  • 4 pieces ripe mangoes, peeled and pureed
  • 1 cup granulated sugar
  • 3 large eggs
  • 0.5 cup fresh lime juice
  • 0.25 cup unsalted butter
  • 1 teaspoon vanilla extract
For topping
  • Whipped cream or fresh fruit for topping

Method
 

Preparation of Tart Shell
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, powdered sugar, and salt.
  3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Stir in ice water until the dough forms.
  5. Press the dough into a tart pan and prick the base with a fork.
  6. Bake for 15-20 minutes until golden, then cool.
Preparation of Mango Curd
  1. In a saucepan, combine mango puree, sugar, eggs, lime juice, and butter.
  2. Cook over medium heat, stirring constantly until thickened.
  3. Stir in vanilla extract and pour the filling into the cooled tart shell.
Final Steps
  1. Chill in the refrigerator for at least 2 hours.
  2. Serve with whipped cream or fresh fruit on top.

Notes

For the best flavor, use ripe and sweet mangoes. Monitor the filling as it thickens to prevent burning. Store in the refrigerator for up to 3 days.
